Two sourdough boules made with whole wheat starter (mine) and Nancy Silverton’s Whole Wheat Sourdough Recipe. Except her recipe is more unbleached non-whole wheat bread flour than whole wheat flour (proportionately). I used whole wheat pastry flour and added bran. Silverton’s recipe calls for coarsely ground whole wheat flour.
